Black Bean and Brown Rice Burrito

Black Bean BurritosIngredients:
1 TSP olive oil

1 cup cooked brown rice

1 large can (14.5 oz) of black beans, rinsed, drained and mashed

1 red bell pepper , chopped

½ yellow onion, chopped

2 tbs. yellow corn meal

1 tsp. chili powder

1 tsp. cayenne pepper

1 Tbs. cumin or cinnamon

salt and pepper taste

1 cup salsa, divided

1 avocado cubed

2 tomatoes seeded and diced


 

Directions:

In a large skillet heat oil on medium for 1 minute .  Add in the onion and red pepper until soft, about 3-4 minutes.  Stir in mashed beans, rice and corn meal. Next add half of the salsa, chili powder, cayenne, cumin/cinnamon, salt and pepper. Cook until heated through, 5-10 minutes.

Spoon mixture on to a large lettuce leaf, gluten-free wrap or tortilla and spread out. Add some salsa, avocado and diced tomato, wrap up and enjoy!

This also works great in a taco shell or tostada filling!
